I thought the opening line was a good example - "I enjoyed speaking with you".

It is a good idea to make the recipient of the letter feel good, as this will give them a positive impression of the letter and of you when they first start reading it.

Bear this in mind - it's not about plonking everything you want to say within the letter - the order is important too.

I agree with Lizzie, the order of the letter is essential. I would do it as follows.
1) Thank the recipient/interviewer and mention that you enjoyed meeting them.
2) Say that you still believe yourself to be an excellent match and mention the relevant experience briefly
3) Say anything you feel you forgot in the interview
4) Tell them you look forward to hearing their decision and will be available for further interviewing or questions should the need arise.
5) Sign off with 'yours sincerely' or 'kind regards'...something formal yet heartfelt.
